Commit to a tasting menu and you’ll be rewarded with a series of more than 20 kaiseki-inspired plates highlighting unexpected ingredients. Raw blue marlin appears beneath an airy brown rice sabayon, while baby sweet corn is brushed with brown butter and grilled over coals. Even Nutri-Grain shows up, the classic cereal turned into miso to make a butterscotch sauce paired with a crisp churro and salted cream for a wickedly rich dessert. The moody, 24-seat underground space invites personal interactions – chef-owner Tim Scott might even bring his ferments to the table. Manager Jemima Phillips’ wine list leans Old World and favours small producers, while four options for matching drinks – including a superb Sober Pairing of non-alcs – are all worth taking. From the opening snacks to the petits fours delivered in a wooden box, Exhibition proves dégustation dining still delights.
