Like the entire Ritz-Carlton Perth precinct, this soaring ground-floor dining room adorned with stone and azure has sworn allegiance to its home state. From a champion cellar boasting a heroic number of local cuvées by the glass (36 at last count) to staff rocking bespoke uniforms created by Perth-based Jonté Designs, Hearth is a masterclass in west coast cool. For chef Brian Cole, repping Western Australia means using smoke and fire to bring out the best in pristine locally sourced ingredients. A burnt honey and carrot butter accompanies fluffy barley sourdough buns; all three cheeses in the twice-baked soufflé are WA-made; fennel pollen and native spice emphasise the gamey joys of tender Wagin duck. It would be easy for a restaurant named for – and anchored by – its open grill to act all macho. But behold the majestic hazelnut and river mint millefeuille, proof that Hearth does fine as well as it does fire.
