Honey parfait at Stillwater, Tas

This caramelised honey parfait almost caused the break of a sacred meal-sharing wedding vow. Topped with macerated strawberries, white chocolate and lemon myrtle cream, it’s delicate and decadent all at once. Almost too good to share. Till death, or dessert, do us part.

Raw tuna risotto at Fico, Hobart

Ruby cubes of raw tuna crown lemon risotto to create one of the most memorable dishes eaten this year. Using whole lemons (and no dairy), this incredibly al dente dish is a fine example of Fico’s style.
