What are the types of noodle soup?

Noodle soups come in all shapes and sizes, reflecting diverse culinary traditions. From the styles of broth (whether rich and creamy or clear and light) to the different types of noodles (ramen, vermicelli, buckwheat, rice or egg — to name a few), noodle soups are a varied thing. Mainstream noodle soups now include: ramen, udon, phở and laksa.

What are the best noodles for noodle soup?

The types of noodles you’re using will depend on the noodle soup you’re making! For example, for phở, you’ll want flat rice noodles called bánh phở, whereas for laksa, you’ll need a combination of hokkien and vermicelli noodles.
