The minimal-waste menu might be bookended by punchy parsnip soup to start and boozy eggnog to finish, and include lashings of flavour from toasted wattleseed to Gospel rye whiskey along the way. Snacks include lacto-fermented vegetables dipped in dried soybean and sesame butter, or a tiny potato croquette infused with yuzu twang. A rich Jerusalem artichoke and potato gratin could be followed by a palm-sized oyster mushroom schnitzel seasoned with saltbush, juniper berries, fennel seeds and pepper, while a tart lettuce and vinegar granita makes a thrillingly modern palate cleanser.
