Baba’s might be the only restaurant in Sydney where an order of barbecue chicken and chips is delivered to the table with a detailed explanation. That’s because this isn’t simply chicken and chips; it’s thrice-cooked Sommerlad chicken with a garlic caramel glaze and some of the best crunchy potatoes around. The warehouse restaurant – a cartwheel of cultures and flavours – captures the vibrancy of Western Sydney with heart, nostalgia and respect. The walls are a collage of rugs, posters and framed photos, the tables covered in plastic tablecloths. It all evokes the image of a classic suburban home, yet the restaurant’s ambition is bold, never modest. That means the drinks list includes rakija (Balkan brandy), Eastern European wine and Lebanese beer. From the menu, roast flathead tastes like three cuisines in one, while the brilliant signature taramasalata with praline, pickles and shokupan toast has become one of the city’s iconic dishes.
