How lucky for Hervey Bay that Brisbane native Timo van Hest relocated to Scarness to open this dark, narrow 22-seat neighbourhood wine bar. Extra kudos for hiring Mitchell Chambers, formerly of Exhibition and Gerard’s, as head chef in the equally compact kitchen. The short menu is loosely arranged into snacks, small plates, mains and sides, plus a well-priced Feed Me option at $65. A crisp potato rosti topped with crème fraîche and salmon caviar has become a staple opening bite. What follows changes often, but will almost certainly include locally caught king prawns, perhaps grilled and coated in a rich coconut curry sauce infused with makrut lime. Middle Eastern flavours appear often in dishes like marinated capsicum and labne with fiery biber salçasi (Turkish red pepper paste), muhammara-spiked Diane sauce paired with beef sirloin, and harissa roast chicken. Van Hest’s drinks list is just as eclectic, spanning cocktails, natural wines and sake.
