If you asked AI to design a Sydney restaurant – though please, let’s never do this – it might look something like Bathers’ Pavilion. That’s not to suggest there’s anything soulless about the place, rather that it ticks every box: breezy, blond-and-blue furnishings, service that’s professional but never stuffy, approachable dishes that make the most of the country’s best produce and, of course, a knockout beach view. On the plates, you might find scarlet-shelled marron, dripping with saffron butter and tomatoes wilted into sweetness, or a skewer of sticky pork jowl and abalone fragrant with bay leaf. More than 350 wine choices wander from the Rhône to the Riverina. If your menu happens to include the pickled greens – a tangy tumble of beans, radicchio and fresh almonds in an exceptional miso dressing – you’ve found yourself one of the best vegetable dishes in the city. No computer could ever hope to create something that good.
