The brief is upscale Manhattan grill meets smart Euro bistro, with bite-sized ricotta dumplings ready to be dunked into a whipped cod roe, or grilled and blushing rump cap into textbook béarnaise sauce. If you like the prawn and marrow mapo tofu at sibling restaurant King Clarence you’ll love its Italian counterpart here, a luxurious pork and prawn Bolognese. Drinks are no afterthought; a glass of NV Gosset Grand Reserve, perhaps, or the restaurant’s own-label rum, fragrant with gentian and sandalwood. Better yet, take a pour from whichever bottle Hildebrandt is urging you to try from his 1000-bottle wine cellar.
