Each morning you’ll find Colin Barker scanning the aisles of his personal outdoor supermarket. The executive chef handpicks the best produce for Megalong’s set tasting menu beneath the shadow of a great sandstone escarpment with views that stretch to the Hydro Majestic Hotel. The gardens on Lot 101 and surrounding farmland are the basis for most dishes at the restaurant, such as a honey nut soup topped with marron oil and cut with cardamom and chives, or a wood-fired shishito pepper dressed with paper-thin pancetta atop an almond sauce that demands to be mopped up with house-made sourdough. From further afield comes Murray cod – its creamy flesh and crisp skin paired with pickled daikon and tender sunchokes – matched with small-batch local and international wines. Come back six months later and the garden supermarket will have an entirely different selection on its shelves. All the more reason to return.
