This energised new opening from the Rick Shores team confidently draws on Mexican, Argentine and Brazilian influences for a coastal party. Take hiramasa kingfish doused in hibiscus tea and tajin oil, or crisp tostadas topped with raw beef, fermented chilli and taki kombu. From the custom wood-fired asado comes Ballina king prawns moqueca, a zesty Afro-Brazilian seafood stew. Falling-off-the-bone short rib, glazed in tamarind beef jus, impresses alongside Peruvian aji amarillo purée, pineapple (both fresh and dehydrated) and heritage corn tortillas. There’s anticipation in the air as you ascend the moody staircase to the stylish first-floor dining space, where sleek timber finishes and brutalist lines unfold across multiple levels. Thirsty? A deep list spanning European, Australian, Mexican and South American wines offers everything from the familiar to the unexpected, while the rooftop bar, Sueño, kicks on until late.Â
