To anyone who has “done the deg” at Vue over the past 25 years, some dishes on the multi-course menu will be familiar, such as the classic chocolate soufflé with a eucalypt backbeat from billy tea ice-cream, or a palate cleanser of liquid nitrogen-frozen petals and leaves coating a quenelle of sorbet. The continuity is touching and provides an appealing context for the newer, often thrilling, dishes from chef Hugh Allen: perhaps ribbons of deep pink kangaroo, briefly salt-cured, studded with the citric pop of green ants and accompanied by an umami-bomb of mushroom-kelp broth, an oyster under a blanket of wasabi and avocado “snow”, or marron accompanied by savoury custard and finger lime. It’s smart, delicious stuff, assisted by impeccable service, that unbeatable view and a drinks list that runs from heady benchmark Burgundy to rare teas from China. Expensive? Obviously. But for this level of detailed finesse, it seems right.
